Easy Taco Casserole


For those of you who have forgotten what summer looks like, here's a reminder. This is at Spring Valley Reservoir out by Troy. We currently have about 18-20 inches of snow, and it is bloomin' COLD outside! It wouldn't seem quite so bad if Moscow actually plowed the roads, but they sure don't.

I got a request for this recipe, so here it is:

Easy Taco Casserole
2 lb. gound beef
1 med. onion, chopped
2 cans cream of mushroom soup
1/2 can diced green chilies
1/2 pkg. dried taco seasoning
12 corn tortilas
Grated cheese
Chopped lettuce
Chopped tomatoes
Sour Cream

Brown meat and onions together. Add chilies, soup, and seasonings.
Layer in baking dish tortillas which have been broken into pieces, meat mixture, and cheese. Repeat until all ingredients are used.
Cook in 350 degree oven until heated through and cheese is melted. Serve with lettuce, tomatoes, and sour cream. (And knowing my children, ranch dressing).

I haven't made this yet, but when I do I will use the entire package of taco seasoning, and the entire can of green chilies. With 2 lbs of meat, I would think that you would want the extra flavor. Plus, what do you do with 1/2 can of green chilies that would be left over?!?!?!
